In the heart of New York City, there’s a neighborhood that beats with the vibrant pulse of centuries-old history and culture. The enigmatic neighborhood of Chinatown has been a source of endless fascination and inspiration for me.
Chinatown is a labyrinth of alleys and hidden gems, where ancient traditions coexist with the modern world. Over the past two decades, I’ve immersed myself in exploring it’s lesser-known streets, wandering through its markets and shops, and indulging in its delectable delicacies in search of culinary enlightenment.
During the pandemic, I witnessed Chinatown suffer and made it my mission to support its struggling small businesses by frequenting as many of my favorite spots as possible. I found myself captivated by the rich heritage, resilient spirit, and mesmerizing flavors that define this iconic corner of the city.
It was here, among the colorful lanterns and the clanging of woks, that the idea for my newest sauce emerged — a tribute to the noir mystique of Chinatown's past. Drawing from tales of secretive crime syndicates and hatchet-wielding warriors who once prowled the infamous Bloody Angle, I envisioned a sauce that embodied the bold spirit and complex character of this storied neighborhood and it’s adjacent influences.
A Tamari (soy) and rice vinegar base provides the familiar foundation, while tangerine and balsamic vinegar bring a touch of sweetness that complements the savory flavors. The star of the show, however, is the pairing of red habanero and Sichuan peppercorn, which delivers a powerful kick of heat and zing that is both surprising and addictive.
