Ingredients:
· ½ bottle of Bayou Gotham® Juju Guru Green Sauce
· 20 shrimp peeled / deveined
· 1 ½ tablespoon olive oil
Slaw Ingredients:
· ¼ bottle of Bayou Gotham® Juju Guru Green Sauce
· ½ cup white vinegar
· ½ med. purple cabbage, sliced
· ½ med. cucumber, diced
· 2 med. carrots, julienned
Crema Ingredients:
· ¼ cup sour cream
· 2 tbsp chopped cilantro
· 1 tablespoon fresh lime juice
· 6 small flour or corn tortillas
Prepare Mardi Gras Slaw:
Whisk Bayou Gotham® Juju Guru Tropic Jalapeño Green Sauce and white vinegar in a large bowl to combine. Add cucumber, purple cabbage, and carrots — toss to coat. Cover and chill until ready to serve. Can be made 8 hours ahead. Keep chilled.
Cook Shrimp
Coat the shrimp with Juju Guru Tropic Jalapeño green sauce and
olive oil. Cover and refrigerate for at least 10 minutes (or up to 2 hours). Heat cast iron skillet on high heat for 2 minutes. Add olive oil and shrimp. Cook shrimp in a skillet over medium-high heat until pink and cooked through, about 5 minutes. Turn off heat.
Assemble Tacos
Stir sour-cream with cilantro and lime juice in a small bowl; set aside. Grill tortillas over stovetop flame until lightly charred. Spoon slaw over warm tortillas, then top with 3 shrimp and drizzle with sour cream sauce. Serve with lime wedges on the side.
